I made chicken in a pot (alright, fancy name- poulet au pot) on Sunday and have plenty of leftovers in the fridge.

Right, what is your favourite or best chicken leftover recipe and would you care to share pls?

I am all tapped out for inspiration atm. Yeah, feeling a bit bleh and bleh.

I have made one pot chicken and veg rice dish last night, so any great tips and recipes will be gratefully received. :)

Right off to play Guild Wars for abit. >_<

Chicken sandwich.

1) Take two slices of thick bread and one of chicken.
2) Spread cold chicken gravy on one slice of bread
3) Spread cold bread sauce thickly on other slide of bread.
4) Place chicken on gravy slice.
5) Smear cranberry sauce liberally on chicken.
6) Top with left over roast-stuffing.
7) Place remaining slice of bread on top
8) Attempt to hold thing together whilst cramming it into gob.

Yummy!

It's more rice, but chicken risotto always goes down well. Failing that, my mother makes chicken vol au vents with left over chicken (chicken in a white sauce filled into little puff pastry cases). Or we have a medieval recipe for chicken pasties....or, of course, there's the

mr_s_face favourite - stew!

I like www.allrecipes.com as it has a load of recipes, is searchable, and each recipe can be adapted for different numbers of people. Each one can be printed out as a recipe card too, which is v handy. Watch for conversion between European and American measurements though!
